  1. Prepare the filling
    In a large bowl, combine ground pork, chopped chives, soy sauce, Shaoxing wine, sesame oil, grated ginger, minced garlic, and white pepper. Mix thoroughly until all ingredients are well incorporated. Cover and refrigerate for 15 minutes to allow flavors to meld.
  2. Fold the wontons
    Place a wonton wrapper on a clean work surface. Add about 1 teaspoon of the pork filling to the center. Brush the edges with beaten egg. Fold the wrapper diagonally to form a triangle, pressing out any air pockets and sealing the edges firmly. Bring the two opposite corners together and press to seal, creating the traditional wonton shape.
  3. Arrange and rest
    Place the folded wontons on a baking sheet lined with parchment paper, making sure they don't touch each other to prevent sticking. Cover with a damp kitchen towel to prevent them from drying out while you prepare the remaining wontons.
  4. Prepare the dipping sauce
    In a small bowl, combine soy sauce, rice vinegar, and chili oil. Mix well and divide into individual dipping bowls.
  5. Cook the wontons
    Bring a large pot of water to a boil. Gently add wontons in batches, being careful not to overcrowd the pot. Cook for about 3-4 minutes, or until they float to the surface and the filling is cooked through. Remove with a slotted spoon and drain well.
  6. Serve immediately
    Transfer the hot wontons to serving plates. Garnish with sliced green onions and serve with the prepared dipping sauce. Enjoy while hot and fresh.
