  1. Prepare the bread
    Preheat your oven to 375°F (190°C). Spread the softened butter evenly over each slice of sourdough bread. Place the bread slices on a baking sheet.
  2. Toast the bread
    Place the baking sheet in the preheated oven and toast the bread for about 5 minutes, until it's lightly golden but still soft in the middle. Remove from the oven but keep the oven on.
  3. Assemble the tartines
    Arrange the Camembert slices evenly over each piece of toasted bread. Layer the pear slices on top of the cheese, slightly overlapping them. Drizzle 2 tablespoons of honey over the pears and cheese. Sprinkle with half of the thyme leaves.
  4. Bake the tartines
    Return the tartines to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly, and the pears have softened slightly.
  5. Add the finishing touches
    Remove the tartines from the oven. Immediately sprinkle with the toasted walnuts, remaining thyme leaves, a drizzle of olive oil, and the balsamic glaze. Season with flaky sea salt and freshly ground black pepper to taste.
  6. Garnish and serve
    Top each tartine with a small handful of arugula or microgreens. Drizzle with a little extra honey if desired. Serve immediately while still warm.
