Toast the breadBrush both sides of the bread slices with olive oil. Toast in a preheated oven at 375°F (190°C) for 5 minutes, or until golden and crisp around the edges but still slightly soft in the center.

Prepare the goat cheese spreadIn a small bowl, mix the goat cheese with 1 tablespoon of honey and 1 teaspoon of thyme leaves until well combined and smooth. Season with a pinch of salt and pepper.

Assemble the tartinesSpread the goat cheese mixture generously over each slice of toast. Arrange the quartered figs on top, gently pressing them into the cheese.

Add the toppingsSprinkle the toasted walnuts over the figs. Drizzle with the remaining honey and balsamic glaze. Finish with the remaining thyme leaves, a light sprinkle of flaky sea salt, and freshly ground black pepper.
