  1. Prepare the dough
    Preheat oven to 450°F (230°C). On a lightly floured surface, roll out the pizza dough into a thin oval or rectangle. Transfer to a baking sheet lined with parchment paper.
  2. Add base flavors
    Brush the dough with olive oil and distribute the sliced garlic evenly across the surface. Season with a pinch of salt and freshly ground black pepper.
  3. Add cheese and figs
    Arrange the mozzarella slices over the dough, leaving a small border for the crust. Distribute the quartered figs evenly over the cheese. If using gorgonzola, sprinkle it between the figs.
  4. Bake the flatbread
    Bake in the preheated oven for 10-12 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
  5. Add finishing touches
    Remove the flatbread from the oven and immediately drape the prosciutto slices over the hot surface. The residual heat will warm the prosciutto without cooking it.
  6. Garnish and serve
    Drizzle the flatbread with honey and balsamic glaze. Sprinkle with fresh thyme leaves and top with arugula. Cut into slices and serve immediately while still warm.
