Prepare the ovenPreheat your oven to 425°F (220°C). If you have a pizza stone, place it in the oven while preheating. Alternatively, line a baking sheet with parchment paper.

Prepare the flatbreadsBrush both sides of each flatbread with olive oil. Place them on the prepared baking sheet or heated pizza stone and pre-bake for about 2-3 minutes until they just begin to crisp slightly.

Add the sauce and toppingsRemove the flatbreads from the oven. Spread BBQ sauce evenly over each flatbread, leaving a small border around the edges. In a bowl, toss the shredded chicken with 2 tablespoons of BBQ sauce, then distribute it evenly over the flatbreads. Sprinkle with mozzarella cheese, red onion slices, roasted red peppers, and corn kernels. If using, add the crumbled goat cheese on top.

Bake the flatbreadsReturn the flatbreads to the oven and bake for 10-12 minutes, or until the edges are golden brown and the cheese is melted and bubbly.

Finish and serveRemove the flatbreads from the oven and immediately drizzle with a little more BBQ sauce. Sprinkle with fresh cilantro, chives, and red pepper flakes if desired. Let rest for 1-2 minutes before slicing into wedges and serving warm.
