Prepare the beefIn a large skillet over medium-high heat, brown the ground beef until no longer pink, about 5-7 minutes. Drain excess fat, then add the taco seasoning and 2/3 cup of water. Simmer for 5 minutes until the sauce thickens, then remove from heat.

Arrange the chipsPreheat oven to 375°F (190°C). On a large, oven-safe platter or baking sheet, spread the tortilla chips in an even layer, making sure they overlap slightly.
-
Add the first layer of toppingsSprinkle half of the cheddar and Monterey Jack cheeses over the chips. Then distribute the seasoned ground beef and black beans evenly over the cheese layer.
-
Add more cheese and bakeSprinkle the remaining cheese over the beef and beans. Place in the preheated oven and bake for 5-7 minutes, or until the cheese is completely melted and bubbly.
-
Add the cold toppingsRemove the nachos from the oven. While still hot, add dollops of guacamole and sour cream across the surface. Spoon salsa over the top, then sprinkle with black olives, green onions, jalapeños, and cilantro.
-
Serve immediatelyServe the loaded nachos right away while they're still warm and the cheese is melty. Place extra guacamole, sour cream, and salsa in small bowls on the side for dipping.
