Instructions

  1. Prepare the bread
Preheat oven to 375°F (190°C). Spread softened butter evenly over one side of each bread slice. Place the slices butter-side up on a baking sheet.
  2. Toast the bread
Bake the bread for 5 minutes until lightly toasted but still soft in the center. Remove from oven but keep the oven on.
  3. Prepare the apples
Toss the thinly sliced apples with lemon juice to prevent browning. In a small bowl, mix the honey with the fresh thyme leaves.
  4. Assemble the tartines
Arrange the Brie slices evenly over each piece of toasted bread. Layer the apple slices decoratively on top of the Brie. Drizzle with the honey-thyme mixture and sprinkle with toasted walnuts.
  5. Melt the cheese
Return the tartines to the oven and bake for 5-7 minutes, until the Brie is melted and bubbly, and the apples are slightly softened.
  6. Finish and serve
Remove from the oven and drizzle with olive oil. Sprinkle with flaky sea salt and freshly ground black pepper. Garnish with additional thyme sprigs if desired. Serve immediately while warm.
