
Millet Congee
Comforting grain porridge with wholesome millet and vegetables

Toast the milletHeat a dry pot or saucepan over medium heat. Add the rinsed millet and toast for 2-3 minutes, stirring frequently, until it becomes fragrant and slightly golden. This enhances the nutty flavor of the millet.

Prepare the baseAdd the vegetable oil to the pot. Add the white parts of the green onions and the ginger slices. Sauté for 1 minute until fragrant. Add the diced carrots and cook for another 2 minutes until slightly softened.

Cook the congeePour in the broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for about 30-35 minutes, stirring occasionally to prevent sticking. The millet should completely break down and the mixture should have a porridge-like consistency.

Add finishing touchesWhen the congee has reached the desired consistency, stir in the soy sauce, tofu (if using), salt, and white pepper. Simmer for an additional 3-5 minutes to let the flavors meld together.

Serve and garnishRemove the ginger slices. Ladle the hot congee into serving bowls. Drizzle with sesame oil and garnish with the green parts of the green onions and chopped cilantro. Serve immediately while hot.
