
Mediterranean Crustless Quiche

Prepare ingredientsPreheat oven to 375°F (190°C). Chop all vegetables and herbs as specified in the ingredients list. Grease a 9-inch round baking dish with olive oil or cooking spray.

Sauté vegetablesHeat olive oil in a skillet over medium heat. Add diced red onion and sauté for 2-3 minutes until softened. Add garlic and cook for another 30 seconds until fragrant. Add spinach and cook until just wilted, about 1 minute. Remove from heat and let cool slightly.

Prepare egg mixtureIn a large bowl, whisk together eggs and milk until well combined. Stir in 3/4 cup of the feta cheese, salt, pepper, basil, and oregano.

Combine and assembleAdd the sautéed vegetable mixture, cherry tomatoes, and sliced olives to the egg mixture. Stir gently to combine all ingredients evenly. Pour the mixture into the prepared baking dish. Sprinkle the remaining 1/4 cup feta cheese on top.

Bake the quichePlace the baking dish in the preheated oven and bake for 30-35 minutes, or until the center is set and the top is lightly golden. A knife inserted in the center should come out clean when the quiche is done.

Rest and serveAllow the quiche to rest for 5-10 minutes before slicing. This helps it set completely and makes for cleaner slices. Serve warm or at room temperature, garnished with additional fresh herbs if desired.
