  1. Prepare the marinade
    In a large bowl, whisk together 2 tablespoons olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper until well combined.
  2. Marinate the chicken
    Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Cook the chicken
    Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing into thin strips.
  4. Warm the pita breads
    While the chicken rests, warm the pita breads in a dry skillet over medium heat for about 30 seconds per side, or wrap them in foil and warm in a 350°F (175°C) oven for 5 minutes.
  5. Prepare the vegetables
    While the chicken cooks, prepare the toppings by slicing the red onion, dicing the tomatoes, and slicing the cucumber.
  6. Assemble the gyros
    Spread 2-3 tablespoons of tzatziki sauce on each warm pita. Top with sliced chicken, red onion, tomatoes, cucumber slices, and crumbled feta cheese.
  7. Wrap and serve
    Fold the pita around the fillings to form a wrap. For a more secure wrap, you can enclose the bottom with parchment paper or aluminum foil. Serve immediately while warm.
