  1. Prepare the eggs
    In a medium bowl, crack the eggs and whisk them until well combined. Season with salt and black pepper.
  2. Sauté the aromatics
    Heat 1 tablespoon of butter in a non-stick pan over medium heat. Add the chopped onions and cook until translucent, about 2 minutes. Add green chilies and sauté for another minute.
  3. Add spices and tomatoes
    Add turmeric powder, red chili powder, and garam masala to the pan. Stir quickly, then add chopped tomatoes. Cook until tomatoes are soft and most of the moisture has evaporated, about 2-3 minutes.
  4. Scramble the eggs
    Pour the whisked eggs into the pan. Cook on low-medium heat, stirring occasionally to create soft scrambled eggs. When eggs are nearly set but still slightly moist, stir in the chopped coriander leaves. Remove from heat.
  5. Toast the bread
    While the eggs are cooking, toast the bread slices until golden brown. Spread the remaining butter on one side of each toast.
  6. Assemble the toast
    Divide the masala egg mixture evenly over the buttered side of each toast. Serve immediately while hot, garnished with additional fresh coriander if desired.
