  1. Prepare the paneer
    Crumble the paneer into small pieces using your fingers or a fork. Set aside. If using store-bought paneer that's firm, you can briefly soak it in warm water to soften before crumbling.
  2. Sauté the aromatics
    Heat oil or ghee in a large pan over medium heat. Add cumin seeds and let them splutter. Add the chopped onions and sauté until they turn translucent and golden brown, about 3-4 minutes.
  3. Add spices and vegetables
    Add the ginger-garlic paste and green chilies. Sauté for 1 minute until the raw smell disappears. Add the chopped tomatoes and cook until they soften and oil starts to separate from the mixture, about 4-5 minutes.
  4. Incorporate dry spices
    Lower the heat and add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 1-2 minutes to allow the spices to release their flavors.
  5. Add paneer and finish cooking
    Add the crumbled paneer to the pan and mix gently to combine with the spice mixture. Cook for 5-6 minutes, stirring occasionally. The paneer should absorb the flavors but not become too dry.
  6. Season and garnish
    Add garam masala and butter (if using). Mix well and cook for another minute. Turn off the heat and garnish with fresh coriander leaves.
