  1. Prepare the paneer
    In a bowl, mix cornstarch, all-purpose flour, salt, and pepper. Coat the paneer cubes in this mixture, ensuring they are evenly covered. Shake off any excess coating.
  2. Fry the paneer
    Heat oil in a deep pan or wok over medium-high heat. Fry the coated paneer cubes until golden brown and crispy on all sides, about 3-4 minutes. Remove and set aside on paper towels to drain excess oil.
  3. Prepare the sauce base
    In the same pan, add a little more oil if needed. Add minced garlic and ginger, stir-frying for 30 seconds until fragrant. Add sliced green chilies and stir for another 30 seconds.
  4. Add vegetables
    Add the onion and bell pepper pieces to the pan. Stir-fry on high heat for 2-3 minutes until the vegetables are slightly softened but still crisp.
  5. Make the sauce
    Reduce heat to medium. Add soy sauce, vinegar, and red chilli sauce to the pan. Mix well to combine all flavors. If the sauce is too thick, add 2-3 tablespoons of water.
  6. Combine and finish
    Add the fried paneer cubes back to the pan. Toss gently to coat all the paneer pieces with the sauce. Cook for another 2 minutes until everything is well combined and heated through.
  7. Serve
    Garnish with chopped spring onions. Serve hot as an appetizer or with steamed rice or noodles as a main course.
