  1. Prepare the egg mixture
    In a bowl, crack the eggs and beat them until well combined. Add all the spices (turmeric, garam masala, red chili powder, cumin powder, and salt) and whisk again until incorporated.
  2. Add the vegetables
    Add the chopped onion, tomato, green chili, coriander, and mint leaves (if using) to the egg mixture. Mix well to ensure all ingredients are evenly distributed.
  3. Heat the pan
    Place a non-stick frying pan over medium heat and add 1 tablespoon of oil or ghee. Allow it to heat up until it shimmers but doesn't smoke.
  4. Cook the omelette
    Pour half of the egg mixture into the pan, tilting to spread it evenly. Cook for about 2 minutes until the bottom is set and golden brown, while the top is still slightly runny.
  5. Fold and finish
    Using a spatula, carefully fold the omelette in half. Cook for another 30 seconds to ensure the inside is cooked through but still moist. Transfer to a plate.
  6. Cook the second omelette
    Repeat steps 3-5 with the remaining egg mixture and oil to make the second omelette. Serve hot with toast, roti, or paratha.
