Ingredients
Instructions
-
Prepare the chickenIn a large bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated. Make sure each piece is well covered for optimal crispiness when cooked.
-
Cook the chickenHeat vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces in a single layer, working in batches if necessary. Cook for 4-5 minutes on each side until golden brown and cooked through. Transfer to a paper towel-lined plate.
-
Make the mandarin sauceIn a medium bowl, whisk together the mandarin orange juice, zest, honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Ensure all ingredients are well combined into a smooth sauce.
-
Glaze the chickenPour the mandarin sauce into the same skillet used for cooking the chicken. Bring to a simmer over medium heat and cook for 3-4 minutes, stirring occasionally until the sauce begins to thicken. Return the cooked chicken to the skillet and toss until all pieces are well coated with the glaze.
-
Reduce the sauceContinue cooking for another 2-3 minutes, stirring frequently, until the sauce has reduced and thickened to a glossy glaze that clings to the chicken. Be careful not to over-reduce as the honey can burn easily.
-
ServeTransfer the mandarin chicken to a serving dish. Garnish with sliced green onions and sesame seeds. Serve hot over steamed rice or with your favorite vegetable side dishes for a complete meal.
