
Japanese Ramen Bowl

Prepare the brothIn a large pot, combine chicken stock, dashi stock, soy sauce, mirin, sesame oil, minced garlic, and sliced ginger. Bring to a simmer over medium heat, then reduce heat to low and continue to simmer for 30 minutes. Strain the broth to remove solids and return to the pot, keeping warm.

Cook the meatFor pork belly: In a separate pan, sear the pork belly slices until browned on both sides, about 2-3 minutes per side. For chicken: Season chicken thighs with salt and pepper and cook in a pan until golden brown and cooked through, about 6-8 minutes per side. Slice the meat and set aside.

Prepare the eggsBring a small pot of water to a boil. Gently lower eggs into the water and cook for exactly 6 minutes for a runny yolk. Transfer immediately to an ice bath, then peel when cool enough to handle. Cut in half lengthwise just before serving.

Cook the noodlesBring a large pot of water to a boil. Cook the ramen noodles according to package instructions, usually 2-3 minutes for fresh noodles. Be careful not to overcook. Drain well and divide among serving bowls.

Assemble the ramen bowlsLadle the hot broth over the noodles. Arrange the sliced meat, halved soft-boiled eggs, blanched spinach, corn (if using), and green onions on top. Place a quarter sheet of nori on the side of each bowl, partially submerged in the broth.

Garnish and serveSprinkle with additional sliced green onions. Serve immediately while hot, with optional condiments like chili oil, sesame seeds, or garlic paste on the side for diners to customize their bowls.
