Prepare the shrimpPat the shrimp dry with paper towels and season lightly with salt and pepper. Ensure the shrimp are completely dry to get a good sear when cooking.

Make the sauceIn a small bowl, combine the soy sauce, mirin, sake, and grated ginger. Mix well and set aside to allow the flavors to meld together.

Sauté the shrimpHeat a large skillet over medium-high heat. Add 2 tablespoons of butter. When the butter is melted and starts to foam, add the shrimp in a single layer. Cook for about 1-2 minutes per side until they start to turn pink. Do not overcrowd the pan; cook in batches if necessary. Remove the shrimp and set aside.

Create the garlic butter baseIn the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

Combine and glazePour the soy sauce mixture into the skillet with the garlic butter. Bring to a simmer and let it reduce slightly, about 1-2 minutes. Return the shrimp to the pan and toss to coat thoroughly in the sauce. Cook for another minute until the shrimp are heated through and fully coated with the glaze.

Finish and serveRemove the skillet from heat. Stir in the fresh lemon juice and half of the sliced green onions. Transfer to a serving plate, garnish with the remaining green onions and toasted sesame seeds. Serve immediately with steamed rice or alongside other Japanese dishes.
