
Gyoza Dumplings
Crispy-bottomed Japanese dumplings with savory pork filling

Prepare the fillingIn a large bowl, combine ground pork, chopped cabbage, green onions, minced garlic, and grated ginger. Add sesame oil, soy sauce, rice vinegar, salt, and white pepper. Mix thoroughly until all ingredients are well incorporated.

Fill the wrappersPlace a gyoza wrapper on your palm and add about 1 tablespoon of filling to the center. Dip your finger in water and moisten the edge of half the wrapper. Fold the wrapper in half to form a half-moon shape, then use your fingers to create 4-5 pleats along the edge for that traditional gyoza look. Press firmly to seal.

Arrange the dumplingsAs you complete each dumpling, place it on a tray dusted with flour to prevent sticking. Make sure they're sitting flat with the pleated edge facing up. Continue until all filling is used.

Pan-fry the gyozaHeat a large non-stick skillet with a tight-fitting lid over medium-high heat. Add 1 tablespoon of vegetable oil and arrange about 10-12 gyoza in the pan, flat-side down, in a circular pattern with edges touching. Cook uncovered until the bottoms are golden brown, about 3 minutes.

Steam the dumplingsOnce the bottoms are crisp, carefully add 1/3 cup of water to the pan (it will sizzle intensely) and immediately cover with the lid. Reduce heat to medium and steam for about 3-4 minutes or until most of the water has evaporated and the filling is cooked through.

Crisp the bottomsRemove the lid and continue cooking for another 1-2 minutes until the water has completely evaporated and the bottoms are crisp again. Gently loosen the gyoza from the pan with a spatula and transfer to a serving plate, crispy-side up.
