  1. Sift the matcha
    Using a fine mesh strainer, sift the matcha powder into a small bowl to remove any clumps. This ensures a smooth texture in your final drink.
  2. Create the matcha paste
    Add the hot water to the sifted matcha powder. Using a bamboo whisk or small regular whisk, vigorously whisk in a zigzag motion until the mixture becomes a smooth paste with no lumps.
  3. Dilute and sweeten
    Pour the cold filtered water into the matcha paste. Add honey or maple syrup and vanilla extract (if using). Stir thoroughly until the sweetener is completely dissolved and the mixture is uniform.
  4. Prepare serving glasses
    Fill two tall glasses with ice cubes. If making the latte version, add 1/4 cup of milk to each glass.
  5. Finish and serve
    Pour the matcha mixture over the ice in each glass. If using milk, gently stir to combine. Garnish with mint leaves if desired and serve immediately with a straw.
