  1. Prepare the marinade
    In a medium bowl, whisk together soy sauce, sesame oil, rice vinegar, and sriracha until well combined. This will be the marinade for your tuna.
  2. Marinate the tuna
    Add the cubed tuna to the marinade and gently toss to coat. Cover and refrigerate for 15-20 minutes while you prepare the other ingredients. Don't marinate for longer as the acid will start to 'cook' the fish.
  3. Cook the rice
    If you haven't already, cook your rice according to package instructions. Let cool slightly before assembling the bowls. For an authentic Hawaiian touch, you can mix the rice with a little rice vinegar and salt.
  4. Prepare the toppings
    While the tuna is marinating, prepare all your toppings: slice the avocado and cucumber, warm the edamame, chop the scallions, and toast the sesame seeds if they aren't already toasted.
  5. Assemble the bowls
    Divide the rice among 4 bowls. Arrange the marinated tuna and all prepared toppings attractively on top of the rice. Start with larger ingredients like avocado and cucumber, then add smaller items like edamame and mango.
  6. Garnish and serve
    Sprinkle each bowl with sliced scallions, toasted sesame seeds, and nori strips. If desired, drizzle with any remaining marinade from the tuna. Serve immediately while fresh.
