  1. Prepare the pita chips
    Preheat oven to 375°F (190°C). Cut each pita bread into 8 triangles. Arrange the triangles in a single layer on baking sheets. Brush both sides with olive oil and sprinkle with salt and dried oregano.
  2. Bake the pita chips
    Bake the pita triangles for 12-15 minutes, turning once halfway through, until they're golden brown and crispy. Remove from oven and let cool slightly.
  3. Prepare the toppings
    While the pita chips are baking, prepare the toppings. Dice the cucumber, tomatoes, and red onion. Slice the olives and chop the parsley. Place each ingredient in separate bowls for easy assembly.
  4. Assemble the nachos
    Arrange the baked pita chips on a large serving platter. Sprinkle evenly with the diced cucumber, tomatoes, red onion, and Kalamata olives.
  5. Add the cheese and sauce
    Crumble the feta cheese over the vegetables. Drizzle tzatziki sauce across the top of the nachos or serve it on the side for dipping.
  6. Garnish and serve
    Finish by sprinkling fresh chopped parsley over the top. Season with additional salt and pepper if desired. Serve immediately while the chips are still crisp.
