
Greek Chicken Souvlaki
Tender marinated chicken skewers with tzatziki sauce

Prepare the marinadeIn a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper until well combined. This Mediterranean marinade will infuse the chicken with classic Greek flavors.

Marinate the chickenAdd the chicken cubes to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight. The longer the chicken marinates, the more flavorful it will become.

Prepare the tzatziki sauceWhile the chicken is marinating, make the tzatziki sauce. Combine the Greek yogurt with the grated cucumber (make sure to squeeze out excess water). Add 1 minced garlic clove, 1 tablespoon olive oil, 1 tablespoon lemon juice, and salt to taste. Refrigerate until ready to serve.

Assemble the skewersWhen ready to cook, thread the marinated chicken pieces onto the soaked wooden skewers, alternating with pieces of red onion and bell peppers. Leave a small space between each piece to ensure even cooking.

Grill the souvlakiPreheat your grill to medium-high heat. Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is golden brown on the outside and reaches an internal temperature of 165°F (74°C). The vegetables should be slightly charred but still tender.

Rest and serveRemove the skewers from the grill and let them rest for 5 minutes. Serve the souvlaki with warm pita bread, tzatziki sauce, and optionally a Greek salad on the side. For an authentic presentation, you can remove the chicken and vegetables from the skewers and wrap them in the pita bread with tzatziki.
