Prepare the cucumberGrate the cucumber using a box grater. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This prevents your tzatziki from becoming watery.

Mix the base ingredientsIn a medium bowl, combine the Greek yogurt, drained grated cucumber, minced garlic, olive oil, and lemon juice. Stir well to combine all ingredients into a smooth mixture.

Add herbs and seasoningsFold in the chopped dill, mint (if using), salt, pepper, and oregano (if using). Mix gently until all herbs are evenly distributed throughout the yogurt mixture.

Rest and serveCover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld together. Taste and adjust seasoning if needed. Serve chilled with a drizzle of olive oil on top.
