  1. Prepare the cucumber
    Grate the cucumber using a box grater. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This prevents your tzatziki from becoming watery.
  2. Mix the base ingredients
    In a medium bowl, combine the Greek yogurt, drained grated cucumber, minced garlic, olive oil, and lemon juice. Stir well to combine all ingredients into a smooth mixture.
  3. Add herbs and seasonings
    Fold in the chopped dill, mint (if using), salt, pepper, and oregano (if using). Mix gently until all herbs are evenly distributed throughout the yogurt mixture.
  4. Rest and serve
    Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld together. Taste and adjust seasoning if needed. Serve chilled with a drizzle of olive oil on top.
  5. Storage
    Tzatziki can be stored in an airtight container in the refrigerator for up to 4 days. Stir before serving as some liquid separation may occur.
