
Greek Gyro Wraps
Tender meat, tangy tzatziki, and fresh veggies in a warm pita

Prepare the tzatziki sauceCombine the Greek yogurt, grated cucumber (with excess water squeezed out), 1 minced garlic clove, 1 tablespoon lemon juice, 1 tablespoon olive oil, and chopped dill in a bowl. Season with salt and pepper, then refrigerate for at least 30 minutes to allow flavors to blend.

Marinate the meatIn a bowl, mix 2 minced garlic cloves, 1 tablespoon olive oil, 1 tablespoon lemon juice, dried oregano, cumin, salt, and pepper. Add the thinly sliced meat and toss to coat evenly. Let marinate for at least 15 minutes, or up to 4 hours in the refrigerator for deeper flavor.

Cook the meatHeat a large skillet over medium-high heat. Add the marinated meat in a single layer (work in batches if necessary) and cook for 3-4 minutes on each side until nicely browned and cooked through. The meat should be slightly crispy at the edges.

Warm the pitasHeat pitas in a dry skillet for about 30 seconds on each side, or wrap them in foil and warm in a 350°F (175°C) oven for 5 minutes. You can also microwave them wrapped in a damp paper towel for 30 seconds.

Assemble the gyrosSpread a generous amount of tzatziki sauce on each warm pita. Top with the cooked meat, sliced red onion, diced tomatoes, and crumbled feta cheese. Sprinkle with additional fresh dill if desired.

Fold and serveFold the pita over the fillings to create a wrap, or roll it up tightly and secure with parchment paper or foil for easier eating. Serve immediately while still warm, with extra tzatziki sauce on the side.
