  1. Combine the liquids
    In a medium bowl, whisk together the olive oil, red wine vinegar, and fresh lemon juice until well combined.
  2. Add the seasonings
    Add the minced garlic, dried oregano, dried basil, Dijon mustard, salt, pepper, dried dill, and dried thyme to the liquid mixture.
  3. Mix thoroughly
    Whisk all ingredients vigorously until well combined. If using honey for a slightly sweeter dressing, add it now and whisk until fully incorporated.
  4. Adjust flavors
    Taste the dressing and adjust seasonings as needed. You may want to add more salt, pepper, or lemon juice depending on your preference.
  5. Store properly
    Transfer the dressing to a glass jar or bottle with a tight-fitting lid. Refrigerate for at least 30 minutes before using to allow the flavors to meld together.
  6. Serve or store
    Shake well before each use. The dressing will keep in the refrigerator for up to 2 weeks. If the olive oil solidifies when cold, simply let it sit at room temperature for 10-15 minutes before using.
