Caramelize the onionsHeat butter and 2 tablespoons olive oil in a large skillet over medium-low heat. Add the sliced onions and sugar, stirring to coat. Cook for 25-30 minutes, stirring occasionally, until onions are deeply golden and caramelized. Add balsamic vinegar in the last 2 minutes of cooking and stir to incorporate. Season with salt and pepper.

Prepare the breadPreheat the oven to 375°F (190°C). Place bread slices on a baking sheet and brush with remaining olive oil. Toast in the oven for 8-10 minutes until golden and crisp around the edges but still slightly soft in the center.

Season the goat cheeseIn a small bowl, mix the goat cheese with 1 teaspoon of thyme leaves, a pinch of salt, and freshly ground black pepper. Set aside to allow flavors to develop while bread is toasting.

Rub with garlicRemove toasted bread from the oven and immediately rub each slice with the cut side of a garlic half. This will impart a subtle garlic flavor to the toast.

Assemble the tartinesSpread a generous layer of the seasoned goat cheese onto each slice of garlic-rubbed toast. Top with a heaping spoonful of caramelized onions, distributing them evenly across the surface.
