  1. Caramelize the onions
    Heat butter and olive oil in a large skillet over medium-low heat. Add sliced onions, sugar, salt, and pepper. Cook for 30-35 minutes, stirring occasionally, until onions are deeply golden brown and caramelized. If onions start to burn, reduce heat and add a splash of water.
  2. Cool the onions
    Remove the caramelized onions from heat and allow them to cool completely to room temperature, about 15 minutes. Once cooled, roughly chop the onions into smaller pieces.
  3. Mix the base
    In a medium mixing bowl, combine sour cream, mayonnaise, Worcestershire sauce, garlic powder, and onion powder. Stir until all ingredients are thoroughly incorporated and the mixture is smooth.
  4. Add the onions
    Fold the cooled, chopped caramelized onions into the sour cream mixture. Stir gently until evenly distributed throughout the dip.
  5. Season and finish
    Fold in the chopped chives. Taste and adjust seasoning with additional salt and pepper if needed. For the best flavor, cover and refrigerate for at least 2 hours or overnight to allow the flavors to meld together.
  6. Serve
    Transfer to a serving bowl, garnish with additional fresh chives, and serve chilled with potato chips, vegetable crudités, or crackers.
