  1. Sauté the aromatics
    Heat olive oil in a large, deep skillet over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Add spices and tomatoes
    Stir in the cumin, paprika, and cayenne pepper, cooking for 30 seconds until aromatic. Pour in the crushed tomatoes, season with salt and pepper, and simmer for 10 minutes until the sauce has thickened slightly.
  3. Incorporate chickpeas
    Add the drained and rinsed chickpeas to the tomato sauce. Stir well and simmer for another 5 minutes to allow the flavors to meld and the chickpeas to warm through.
  4. Create wells and add eggs
    Using the back of a spoon, create 6 wells in the sauce. Carefully crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny (or cook longer if you prefer firmer yolks).
  5. Garnish and serve
    Remove from heat and sprinkle with crumbled feta cheese and chopped cilantro. Season with additional salt and pepper if needed. Serve hot directly from the skillet with crusty bread on the side for dipping.
