Prepare the chickenIn a large bowl, toss the chicken pieces with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated. Let marinate for 5 minutes while you prepare other ingredients.

Cook the chickenHeat a large skillet over medium-high heat. Add the seasoned chicken pieces and cook for 8-10 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center.

Make the buffalo sauceIn a small bowl, whisk together the buffalo hot sauce and melted butter until well combined. Pour the sauce over the cooked chicken in the skillet and stir to coat evenly. Reduce heat to low and simmer for 2-3 minutes until the sauce slightly thickens and clings to the chicken.

Warm the tortillasWhile the chicken is simmering, warm the tortillas according to package directions. You can warm them in a dry skillet for 30 seconds per side, in the microwave wrapped in damp paper towels, or in the oven wrapped in foil.

Prepare the toppingsArrange all the toppings in separate bowls: shredded lettuce, diced tomatoes, sliced red onion, blue cheese or ranch dressing, and chopped cilantro if using.

Assemble the tacosPlace a warm tortilla on a plate. Add a spoonful of buffalo chicken down the center. Top with lettuce, tomatoes, red onion, and a drizzle of blue cheese or ranch dressing. Sprinkle with cilantro if desired.
