  1. Prepare the beef
    Place thinly sliced beef in a bowl and toss with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Let marinate for at least 10 minutes while preparing other ingredients.
  2. Make the sauce
    In a small bowl, combine soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, and beef broth. Stir until sugar is dissolved and set aside.
  3. Cook the beef
    Heat 1 tablespoon oil in a large wok or skillet over high heat until almost smoking. Add beef in a single layer and cook without stirring for 1 minute. Stir and cook for another minute until beef is browned but still slightly pink inside. Remove beef and set aside.
  4. Stir-fry aromatics
    Add remaining tablespoon of oil to the same wok. Add minced ginger and garlic and stir-fry for 30 seconds until fragrant, being careful not to burn.
  5. Cook the vegetables
    Add bell peppers, broccoli, and carrots to the wok. Stir-fry for 3-4 minutes until vegetables are crisp-tender. Add a splash of water if the pan gets too dry.
  6. Combine everything
    Return beef to the wok. Pour in the sauce and bring to a simmer. Cook for 1-2 minutes until sauce slightly thickens and coats the beef and vegetables.
  7. Finish the dish
    Add sliced green onions and toss everything together. Cook for an additional 30 seconds until green onions are slightly wilted but still bright green.
  8. Serve
    Transfer to a serving plate and garnish with additional sliced green onions if desired. Serve immediately with steamed rice.
