  1. Prepare the sauce
    In a small bowl, combine soy sauce, mirin, sake, sugar, and half of the grated ginger. Mix well until the sugar dissolves completely and set aside.
  2. Prepare the pork
    If the pork slices are too thick, place them between plastic wrap and gently pound to make them thinner. Pat the pork dry with paper towels and season lightly with salt and pepper.
  3. Heat the pan
    Heat vegetable oil in a large skillet or wok over medium-high heat. When the oil is hot but not smoking, add the minced garlic and remaining grated ginger. Sauté for about 30 seconds until fragrant.
  4. Cook the onions
    Add the sliced onions to the pan and sauté for 2-3 minutes until they begin to soften and become translucent.
  5. Cook the pork
    Add the pork slices to the pan in a single layer (you may need to do this in batches). Cook for about 2 minutes on each side until the pork is browned and nearly cooked through.
  6. Add the sauce
    Pour the prepared sauce over the pork and onions. Reduce heat to medium and simmer for 2-3 minutes, occasionally turning the pork to coat evenly with the sauce, until the sauce has slightly thickened and the pork is fully cooked.
  7. Serve
    Transfer the ginger pork to serving plates, making sure to drizzle some sauce over the meat. Garnish with chopped green onions and sesame seeds. Serve hot with steamed rice and vegetables.
