
Beef Fried Rice
Classic savory stir-fried rice with tender beef and vegetables

Marinate the beefIn a small bowl, mix the sliced beef with 1 tablespoon soy sauce and 1/2 teaspoon of sesame oil. Allow to marinate for at least 10 minutes while preparing other ingredients.

Cook the eggsHeat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add beaten eggs and quickly scramble until just set but still moist, about 30 seconds. Remove eggs to a plate and set aside.

Stir-fry the beefAdd the remaining oil to the wok and increase heat to high. Add marinated beef in a single layer and cook without stirring for 1 minute to sear. Then stir-fry for another 1-2 minutes until beef is browned but still slightly pink inside. Remove beef to the plate with eggs.

Cook the vegetablesIn the same wok, add onions, garlic, and ginger. Stir-fry for 30 seconds until fragrant. Add carrots and stir-fry for 2 minutes until they begin to soften. Add peas and stir-fry for another 30 seconds.

Combine all ingredientsAdd the cold rice to the wok, breaking up any clumps with your spatula. Stir-fry for 2-3 minutes until the rice is heated through. Add the remaining soy sauce and oyster sauce, tossing to coat all ingredients evenly.

Return beef and eggsReturn the cooked beef and scrambled eggs to the wok. Gently fold everything together to combine all ingredients thoroughly, cooking for another 1-2 minutes.

Finish the dishDrizzle with the remaining sesame oil and toss to combine. Turn off the heat and fold in most of the sliced green onions, reserving some for garnish.
