  1. Prepare the broth
    In a large stockpot, bring the chicken stock to a boil. Reduce heat and simmer for at least 2 hours. The key to authentic Cross-Bridge Noodles is a rich, flavorful broth with a layer of fat on top that helps maintain heat. For extra richness, add chicken bones or a whole chicken during simmering and remove before serving.
  2. Prepare the ingredients
    While the broth simmers, prepare all ingredients and arrange them on a large platter. Slice the meat very thinly (partially freezing can help with this). Wash and trim the vegetables. The traditional presentation includes arranging all ingredients decoratively on a large platter.
  3. Cook the noodles
    If using dried rice noodles, soak them according to package instructions until soft but still firm. Drain well and set aside. If using fresh noodles, simply arrange them in serving bowls.
  4. Heat the serving vessels
    Traditional service requires preheating large ceramic bowls. Pour boiling water into each bowl, let sit for a minute, then discard the water. This ensures the broth stays hot during the entire meal.
  5. Assemble at the table
    Pour the piping hot broth into the preheated bowls at the table. The broth must be at a full boil (at least 200°F/93°C) to cook the raw ingredients. Immediately add the beaten egg and swirl to create silky strands in the broth.
  6. Add remaining ingredients
    Quickly add the thinly sliced meats to the hot broth (they will cook instantly). Then add shrimp, mushrooms, bean sprouts, and chives. The traditional sequence matters - proteins first, then vegetables - as each ingredient cooks at different rates.
  7. Season and serve
    Add rice noodles last, then season with soy sauce, sesame oil, and white pepper to taste. Offer Yunnan pickle and chili oil on the side for each diner to add according to preference. The soup should be eaten immediately while the broth is still hot enough to have steam rising.
