
Sichuan Dan Dan Noodles
Spicy, numbing noodles with minced pork and sesame sauce

Prepare the sauceIn a medium bowl, combine the sesame paste, soy sauce, black vinegar, 3 tablespoons of chili oil (reserve some sediment for topping), minced garlic, sugar, and 1 tablespoon of ground Sichuan peppercorns. Add the chicken stock or water and whisk until smooth. Set aside.

Cook the porkHeat vegetable oil in a wok or large skillet over medium-high heat. Add the white parts of the green onions and cook for 30 seconds until fragrant. Add the ground pork and cook, breaking it apart with a spatula, until browned and crispy, about 5-6 minutes. Add the preserved vegetable and stir-fry for another minute. Remove from heat.

Boil the noodlesBring a large pot of water to a boil. Cook the noodles according to package instructions until al dente (usually 3-5 minutes for fresh noodles, 8-10 minutes for dried). Drain well and divide among four serving bowls.

Assemble the dishPour the prepared sauce evenly over each bowl of noodles. Top with the cooked pork mixture. Garnish each bowl with the remaining Sichuan peppercorns, remaining chili oil with sediment, chopped peanuts, and green parts of the green onions.

Serve immediatelyMix everything together thoroughly before eating to coat the noodles with all the flavors. The dish should be enjoyed hot while the noodles are still springy and the aromatics are fragrant.
