  1. Prepare the rice
    In a large pot, combine the wild rice, brown rice, and broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and most of the liquid has been absorbed. Different brands of wild rice may vary in cooking time, so check package instructions.
  2. Sauté the vegetables
    While the rice cooks, heat olive oil in a large skillet over medium heat. Add the onion, carrots, and celery, and sauté for 5-6 minutes until vegetables begin to soften. Add the mushrooms and garlic, and continue cooking for another 4-5 minutes until mushrooms are golden and vegetables are tender.
  3. Combine ingredients
    When the rice is cooked, fluff it with a fork and transfer to a large mixing bowl. Add the sautéed vegetables, dried cranberries, toasted nuts, thyme, and sage. Gently fold everything together until well combined. Season with salt and pepper to taste.
  4. Rest and serve
    Cover the pilaf and let it rest for 5 minutes to allow the flavors to meld. Just before serving, gently stir in the fresh parsley, reserving a small amount for garnish. Transfer to a serving dish and sprinkle with the remaining parsley.
  5. Storage and reheating
    This pilaf can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, add a splash of broth or water and warm in a covered pan over medium-low heat, stirring occasionally, or microwave until heated through.
