
Cranberry Wild Rice Stuffing
Nutty wild rice with sweet cranberries and savory herbs

Cook the wild riceIn a large saucepan, bring the broth to a boil. Add the wild rice, reduce heat to low, cover and simmer for about 40-45 minutes until the rice is tender and has split open. Drain any excess liquid and set aside.

Prepare the vegetablesWhile the rice is cooking, melt the butter in a large skillet over medium heat. Add the diced onion, celery, and carrots, and sauté for 8-10 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Combine ingredientsIn a large mixing bowl, combine the cooked wild rice, sautéed vegetables, dried cranberries, toasted pecans, chopped parsley, sage, thyme, and orange zest. Toss gently to combine all ingredients evenly.

Season the stuffingAdd salt and pepper to the mixture. Taste and adjust seasonings as needed. If the stuffing seems dry, you can add a small amount of additional broth until it reaches your desired consistency.

Serve or stuffThe stuffing can be served immediately as a side dish, or cooled slightly and used to stuff a turkey or chicken before roasting. If using as stuffing for poultry, ensure the internal temperature of the stuffing reaches 165°F (74°C) when fully cooked.

Bake for a crispy top (optional)For a crispy top, transfer the stuffing to a buttered baking dish, cover with foil, and bake at 350°F (175°C) for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden and crispy.
