  1. Prepare the filling
    In a large bowl, combine ground pork, 1 tablespoon fish sauce, lime juice, minced garlic, grated ginger, and chopped lemongrass. Mix well and let marinate for 10 minutes to allow flavors to develop.
  2. Cook the pork mixture
    Heat vegetable oil in a large skillet over medium-high heat. Add the marinated pork mixture and cook for 8-10 minutes, breaking it up with a wooden spoon until well browned and cooked through. Add the remaining tablespoon of fish sauce toward the end of cooking. Remove from heat and let cool slightly.
  3. Prepare the vegetables
    While the pork is cooking, prepare the vegetables. Wash and dry lettuce leaves carefully to avoid tearing. Arrange julienned carrots, bean sprouts, mint leaves, and cilantro leaves on a serving platter.
  4. Make dipping sauce
    In a small bowl, combine hoisin sauce with 1 tablespoon of water to thin it slightly. If desired, add sriracha sauce for a spicy kick. Stir well and transfer to a small serving bowl.
  5. Assemble serving platter
    Transfer the cooked pork mixture to a serving bowl. Arrange the lettuce leaves, herb platter, chopped peanuts, and dipping sauce on the table for everyone to assemble their own wraps.
  6. Assemble and eat
    To eat, take a lettuce leaf, add a spoonful of the pork mixture, top with carrots, bean sprouts, herbs, and sprinkle with chopped peanuts. Drizzle with a small amount of dipping sauce. Fold the sides of the lettuce leaf in and roll up like a burrito, or eat taco-style.
