Prepare the tamarind liquidIf using tamarind pulp, soak it in warm water for 15 minutes, then strain to remove seeds and fibers. If using paste, dilute with 1/2 cup warm water and set aside.

Prepare the broth baseIn a large pot, bring the fish stock or water to a simmer. Add the lemongrass, fish sauce, and sugar. Simmer for 5 minutes to infuse the flavors.

Add the vegetablesAdd the pineapple chunks, tomato wedges, and okra to the broth. Simmer for about 8-10 minutes until the vegetables start to soften but still maintain their shape.

Cook the fishHeat the cooking oil in a separate pan over medium-high heat. Lightly sear the fish pieces for about 1-2 minutes per side until they're slightly golden. Carefully transfer the fish to the simmering broth.

Finish the soupAdd the tamarind liquid to the soup and stir gently. Simmer for an additional 3-5 minutes until the fish is fully cooked but still tender. Add the bean sprouts and elephant ear stem (if using) in the last minute of cooking.

Season and garnishTaste the soup and adjust the seasoning with more fish sauce or sugar if needed. The soup should have a perfect balance of sour, sweet, and savory flavors. Remove from heat and discard the lemongrass stalks.

ServeLadle the hot soup into bowls, making sure each serving has a good portion of fish and vegetables. Garnish with fresh rice paddy herb or cilantro and sliced chili peppers if desired. Serve immediately with steamed rice on the side.
