  1. Marinate the beef
    In a bowl, combine the sliced beef with fish sauce, lime juice, minced garlic, and brown sugar. Mix well to coat the beef evenly. Let marinate for at least 15 minutes while preparing other ingredients.
  2. Cook the beef
    Heat a large skillet over medium-high heat. Cook the marinated beef for 3-4 minutes until browned and cooked through. Remove from heat and set aside to cool slightly.
  3. Prepare the rice paper
    Fill a large, shallow dish with warm water. Dip one rice paper wrapper into the water for about 5 seconds until it begins to soften. Lay it flat on a clean, damp kitchen towel or cutting board.
  4. Assemble the rolls
    On the bottom third of the rice paper, place a small handful of vermicelli noodles. Top with a few slices of cooked beef, julienned carrots, cucumber, bean sprouts, and herbs. Be careful not to overfill.
  5. Roll the spring rolls
    Fold the bottom edge of the rice paper over the filling, then fold in the sides. Continue rolling tightly until completely sealed, like wrapping a burrito. Place seam-side down on a serving platter.
  6. Prepare the dipping sauce
    In a small bowl, place the hoisin sauce. If it's too thick, add 1-2 teaspoons of water to thin it slightly. Top with crushed peanuts for added texture and flavor.
  7. Finish and serve
    Repeat the rolling process with the remaining ingredients. Cover completed rolls with a damp cloth to prevent them from drying out. Serve immediately with the hoisin dipping sauce.
