  1. Prepare the teriyaki sauce
    In a small bowl, combine soy sauce, mirin, sake, sugar, grated ginger, and minced garlic. Stir until sugar is completely dissolved. Set aside about 1/3 of the sauce for later use.
  2. Marinate the beef
    Place the thinly sliced beef in a large bowl or zip-top bag and pour the remaining 2/3 of the teriyaki sauce over it. Gently toss to coat all pieces evenly. Allow to marinate for at least 10 minutes at room temperature, or up to 4 hours in the refrigerator for more flavor.
  3. Cook the beef
    Heat vegetable oil in a large skillet or wok over medium-high heat. When the pan is very hot, add the marinated beef in a single layer, working in batches if necessary to avoid overcrowding. Cook for 1-2 minutes on each side until the beef is nicely browned and caramelized around the edges.
  4. Glaze with sauce
    Pour the reserved teriyaki sauce into the pan with the beef. If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and add to the sauce. Bring to a simmer and cook for 1-2 minutes until the sauce thickens and coats the beef with a glossy glaze.
  5. Serve
    Transfer the beef teriyaki to a serving plate and garnish with sliced green onions and toasted sesame seeds. Serve hot with steamed white rice on the side. For an authentic Japanese meal, pair with miso soup and a simple cucumber salad.
