Prepare the vegetablesWash, peel, and chop all vegetables according to the ingredient list. Place the potatoes in a bowl of cold water to prevent browning until ready to use.

Create the flavor baseHeat oil in a large, deep pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds. Add chopped onions and sauté until golden brown, about 5-7 minutes. Add minced garlic and grated ginger, cooking for another 2 minutes until fragrant.

Build the curry sauceAdd the vindaloo curry paste to the pan and stir continuously for 2 minutes to release the flavors. Pour in the diced tomatoes with their juice, white vinegar, and vegetable broth. Bring to a simmer and let it cook for 5 minutes, allowing the flavors to meld together.

Cook the vegetablesAdd the potatoes to the sauce first, as they take longer to cook. Cover and simmer for 10 minutes. Then add the cauliflower and carrots, cooking for another 10 minutes. Finally, add the green peas and cook for 5 more minutes, or until all vegetables are tender but still hold their shape.

Adjust the seasoningTaste the curry and adjust the seasoning with salt as needed. If you prefer a thicker sauce, you can simmer uncovered for a few more minutes. For a thinner sauce, add a splash of water or vegetable broth.

Serve the vindalooRemove from heat and let the vindaloo rest for 5 minutes before serving. This allows the flavors to settle and develop further. Garnish with fresh cilantro leaves just before serving.
