
Lamb Vindaloo
Fiery Goan curry with tender lamb in a spicy vinegar sauce

Prepare the marinadeIn a blender, combine garlic, ginger, vinegar, red chili paste, turmeric, cumin, coriander, and ground black pepper. Blend into a smooth paste. Add a little water if needed to achieve desired consistency.

Marinate the lambPlace the lamb cubes in a large bowl and coat thoroughly with the spice paste. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.

Prepare the baseHeat oil in a large, heavy-bottomed pot over medium heat. Add mustard seeds and let them pop. Add cinnamon stick and cardamom pods, sautéing for 30 seconds until fragrant. Add the chopped onions and cook until golden brown, about 8-10 minutes.

Cook the lambAdd the marinated lamb along with all the marinade to the pot. Stir well to combine with the onion mixture. Season with salt. Cook for about 5 minutes, stirring occasionally to prevent sticking.

Simmer the curryAdd 1 cup of water, stir, and bring to a boil. Reduce heat to low, cover, and simmer for about 1 hour or until the lamb is tender, stirring occasionally. Add more water if the sauce becomes too thick.

Reduce the sauceOnce the lamb is tender, uncover the pot and increase heat to medium. Cook for another 10-15 minutes to reduce the sauce to your desired consistency. The authentic vindaloo has a thick, intense sauce that coats the meat.

Rest and serveRemove from heat and let the vindaloo rest for 10 minutes to allow the flavors to meld. Remove the cinnamon stick before serving. Serve hot with steamed basmati rice or naan bread.
