
Chicken Vindaloo
Spicy Indian curry with tender chicken and tangy flavors

Marinate the chickenIn a large bowl, mix 1 tablespoon of the vindaloo spice mix with the vinegar to make a paste. Add the chicken pieces, coat thoroughly, and let marinate for at least 30 minutes, or preferably overnight in the refrigerator.

Prepare the base sauceHeat oil in a large, heavy-bottomed pot over medium heat. Add cinnamon stick and dried chilies, sautéing for 30 seconds until fragrant. Add chopped onions and cook for 8-10 minutes until soft and golden brown.

Add aromatics and spicesAdd the minced garlic and grated ginger to the pot and cook for 1-2 minutes until fragrant. Stir in the remaining vindaloo spice mix and cook for another minute to toast the spices and release their flavors.

Cook the chickenAdd the marinated chicken to the pot and sear for 5 minutes, stirring occasionally, until the pieces are browned on all sides. Add the tomato paste and stir to coat the chicken evenly.

Simmer the curryPour in the chicken broth, add the potato cubes (if using), brown sugar, and salt to taste. Bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened.

Adjust the flavorTaste and adjust the seasoning by adding more salt, vinegar, or sugar as needed to balance the heat, acidity, and sweetness of the curry. The vindaloo should have a tangy, spicy flavor profile.

ServeRemove the cinnamon stick and dried chilies. Garnish with fresh cilantro leaves and serve hot with steamed basmati rice, naan bread, or Indian papadums.
