Instructions

  1. Prepare the tomato mixture
In a medium bowl, combine the diced tomatoes, minced garlic, sliced basil, balsamic vinegar, salt, pepper, and 1/4 cup olive oil. Gently toss to combine. Cover and let sit at room temperature for at least 15 minutes to allow flavors to develop.
  2. Toast the bread
Preheat your oven to 450°F (230°C). Arrange bread slices on a large baking sheet. Brush both sides lightly with olive oil. Bake for 5-6 minutes until bread is lightly toasted and golden around the edges, turning halfway through.
  3. Prepare the bread base
Remove the bread from oven and immediately rub one side of each slice with the cut side of a garlic clove. This infuses the bread with a delicious garlic flavor without being overwhelming.
  4. Assemble the bruschetta
Just before serving, give the tomato mixture another gentle stir. Using a slotted spoon to drain excess liquid, top each bread slice with a generous spoonful of the tomato mixture. If using, sprinkle with Parmesan cheese and fresh oregano.
  5. Serve immediately
Arrange the bruschetta on a serving platter and serve while the bread is still warm and slightly crisp. For best results, don't top the bread until just before serving to prevent it from becoming soggy.
