  1. Prepare the broth
    In a large pot, combine vegetable broth, soy sauce, mirin, 1 tablespoon sesame oil, rice vinegar, grated ginger, minced garlic, and white parts of green onions. Bring to a simmer over medium heat and cook for 10 minutes to allow flavors to meld.
  2. Cook the tofu
    While the broth simmers, heat remaining sesame oil in a non-stick skillet over medium-high heat. Add tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Set aside.
  3. Prepare the noodles
    Cook ramen noodles according to package instructions, typically 2-3 minutes in boiling water. Drain well and divide among four serving bowls.
  4. Add vegetables
    Add shiitake mushrooms to the simmering broth and cook for 3 minutes. Then add baby spinach and cook just until wilted, about 1 minute.
  5. Assemble the ramen bowls
    Ladle the hot broth and vegetables over the noodles in each bowl. Arrange the seared tofu on top. If using, place half a soft-boiled egg in each bowl.
  6. Garnish and serve
    Sprinkle with green parts of sliced green onions and add strips of nori. Serve immediately while hot, allowing diners to mix ingredients as they eat.
