  1. Prepare the sweet potatoes
    Preheat oven to 400°F (200°C). Prick sweet potatoes with a fork and bake for 45-60 minutes until very soft. Allow to cool, then scoop out the flesh and mash until smooth. Measure out 2 cups and set aside. Reduce oven temperature to 350°F (175°C).
  2. Prepare the baking pan
    Grease and flour a 9x5 inch loaf pan, or line with parchment paper, leaving some overhang for easy removal.
  3. Mix wet ingredients
    In a large bowl, whisk together the mashed sweet potatoes, melted butter, eggs, milk, and vanilla extract until well combined.
  4. Combine dry ingredients
    In a separate bowl, whisk together the flour, sugar, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt.
  5. Make the batter
    Gradually add the dry ingredients to the sweet potato mixture, stirring just until combined. Do not overmix. If using pecans, fold them in gently.
  6. Bake the bread
    Pour the batter into the prepared loaf pan and smooth the top. Bake at 350°F (175°C) for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Cool the bread
    Allow the bread to cool in the pan for 15 minutes, then remove from the pan and cool completely on a wire rack before slicing.
