  1. Prepare the patties
    Divide the ground beef into 4 equal portions (about 4 ounces each) and gently shape into loose balls. Do not compact the meat or form tight patties. Season each ball with salt and pepper. Keep refrigerated until ready to cook.
  2. Heat the cooking surface
    Heat a large cast iron skillet or griddle over high heat until it's extremely hot, about 5 minutes. You want the surface to be smoking hot to achieve the perfect sear.
  3. Toast the buns
    While the skillet is heating, spread butter on the cut sides of each bun. Place the buns, buttered side down, on a separate skillet over medium heat and toast until golden brown, about 2-3 minutes. Set aside.
  4. Smash and cook the burgers
    Add 1/2 tablespoon of oil to the hot skillet. Place one or two meat balls on the skillet, depending on size. Using a sturdy metal spatula and applying firm pressure, smash each ball down to a thickness of about 1/4 inch. Cook for 1 minute without touching them to develop a deep brown crust.
  5. Flip and add cheese
    After the patties have cooked for about 1 minute and developed a crust, carefully scrape under each patty with the spatula to release it, and flip in one quick motion. Immediately place a slice of American cheese on top of each patty and cook for another 30-45 seconds.
  6. Cook the onions
    In a small separate pan, heat 1/2 tablespoon of oil over medium-high heat. Add the sliced onions and cook until slightly softened and beginning to brown, about 3-4 minutes. Set aside.
  7. Assemble the burgers
    Spread burger sauce on the bottom half of each toasted bun. Add a lettuce leaf, 2 tomato slices, the cheese-topped patty, cooked onions, and pickles. Spread a small amount of sauce on the top bun and place it on top of the burger.
  8. Serve immediately
    Wrap each burger in parchment paper for an authentic diner feel and let them rest for 1 minute to allow flavors to meld. Serve hot with french fries or your favorite side.
