  1. Brown the beef
    Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks, about 7-8 minutes. Drain excess fat, leaving about 1 tablespoon in the pan.
  2. Sauté the aromatics
    Add the diced onions to the skillet with the beef and cook until softened, about 5 minutes. Add the minced garlic and diced bell pepper and cook for another 2 minutes until fragrant.
  3. Combine ingredients in slow cooker
    Transfer the beef mixture to a 6-quart slow cooker. Add the kidney beans, crushed tomatoes, tomato paste, and beef broth. Stir to combine.
  4. Add spices and seasonings
    Add the chili powder, cumin, dried oregano, smoked paprika, cayenne pepper, and brown sugar to the slow cooker. Season with salt and black pepper to taste. Stir thoroughly to combine all ingredients.
  5. Slow cook
    Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally if possible. The longer it cooks, the more the flavors will develop and meld together.
  6. Check seasoning and consistency
    About 30 minutes before serving, taste and adjust seasonings if needed. If the chili is too thin, leave the lid off for the remaining cooking time to allow it to thicken. If too thick, add a little more beef broth or water.
  7. Serve and garnish
    Ladle the chili into bowls and serve with your choice of toppings such as shredded cheddar cheese, sour cream, diced avocado, sliced jalapeños, chopped cilantro, or diced green onions.
