  1. Brown the turkey
    Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground turkey and cook until browned, breaking it up with a wooden spoon, about 7-8 minutes. Transfer to a plate and set aside.
  2. Sauté the vegetables
    In the same pot, add the remaining tablespoon of olive oil. Add the diced onions and bell pepper, cooking until softened, about 5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add spices and seasonings
    Stir in the chili powder, cumin, oregano, and cayenne pepper. Cook for 1 minute to toast the spices and release their flavors. Season with salt and black pepper to taste.
  4. Combine all ingredients
    Return the browned turkey to the pot. Add the kidney beans, black beans, crushed tomatoes, chicken broth, and tomato paste. Stir well to combine all ingredients.
  5. Simmer the chili
    Bring the mixture to a boil, then reduce heat to low. Cover partially and simmer for 30-35 minutes, stirring occasionally, until the chili has thickened and flavors have melded together.
  6. Adjust seasoning
    Taste and adjust seasoning with additional salt, pepper, or spices if needed. If the chili is too thick, add a little more chicken broth; if too thin, simmer uncovered for a few more minutes.
