  1. Prepare the slaw
    In a large bowl, combine the shredded cabbage, chopped cilantro, 2 tablespoons of lime juice, mayonnaise, and honey. Toss well to coat evenly. Season with salt to taste. Refrigerate while preparing the rest of the recipe to allow flavors to meld.
  2. Season the shrimp
    In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, cayenne (if using), salt, and pepper until evenly coated.
  3. Cook the shrimp
    Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque. Remove from heat and toss with the remaining 1 tablespoon of lime juice.
  4. Warm the tortillas
    Heat the corn tortillas in a dry skillet for 30 seconds per side, or wrap them in damp paper towels and microwave for 30 seconds. Keep warm by wrapping in a clean kitchen towel.
  5. Assemble the tacos
    Place a generous spoonful of the cilantro lime slaw on each warm tortilla. Top with 3-4 cooked shrimp, sliced avocado, and a sprinkle of cotija or feta cheese.
  6. Serve immediately
    Garnish with additional cilantro leaves and serve with lime wedges on the side for squeezing over the tacos just before eating.
